Las Terceras already incorporates the new casein model in its Manchego Cheese, a mandatory measure presented by the C.R.D.O. Manchego cheese that serves to identify authentic cheeses of Protected Designation of Origin.
The new design of casein is ring shaped and larger than the previous one, in order to cover all the cheese. In this way, each wedge of Manchego cheese will have a part of the identifying sign of Manchego Cheese PDO, thus avoiding possible fraud or forgery.
The casein is placed on the cheese in the pressing phase, covering the entire flat surface of the cheese, and in it we can find information about the manufacturer and its date of production, among others.
