Creamy cheesecake with Las Terceras manchego cheese

INGREDIENTS

  • 500 gr cream cheese
  • 250 gr Cream 35% fat
  • 5 eggs
  • 100 gr brie cheese
  • 80 gr Manchego semi-cured cheese Las Terceras PDO
  • 200 gr Sugar
  • Lemon zest
  • Salt (a pinch)
  • 1 tablespoon wheat flour
  • 1 package of Maria cookies
  • A tablespoon of butter

PREPARATION

We preheat the oven to 190 degrees with heat up and down. We beat all the ingredients except the flour, butter and cookies. Once the ingredients are well incorporated, add the sifted flour and continue stirring. We grease a mold and cover it with baking paper. We mix the cookies with the butter (previously heated). Add the mixture to the base of the mold. Once the base is covered, we add the cake dough on top. We put the mold in the oven for 30 minutes. After this time, we bake it on the grill at 270 degrees for 3 minutes. We take it out of the oven and, when it is cold, we put it in the fridge for approximately 3 hours. We serve with seasonal figs.
