Tasting of aged Manchego cheese with PDO certification
At Las Terceras, we wanted to start the year with an activity designed to learn, compare and continue refining every detail of our Manchego PDO cheese: a blind tasting with cheeses from the same designation of origin. To do this, six aged Manchego PDO cheeses were selected which, despite sharing the same origin and category, offered very varied sensations and clearly differentiated personalities.

Throughout the session, key elements such as aromatic intensity, creaminess and firmness in the mouth, balance of flavours and finish were assessed. Our master cheesemakers participated in the panel alongside industry specialists, including Mario Román, whose experience helped us to interpret and evaluate the results with greater precision.
The final result was particularly satisfying: our old PDO cheese received the highest rating of all the cheeses tasted, ranking as the best and confirming that a job well done — from selection to maturation — is evident in every piece.


It should be noted that our aged Manchego PDO cheese was the highest rated of the six, obtaining the maximum score and thus certifying the high quality of Manchego PDO cheese production.
