Las Terceras D.O.P. Manchego Cheese Foam and Iberian Mortadella on Oven-Warmed Brioche
INGREDIENTS:
- 200 g Las Terceras semi-cured cheese.
- 200 g Iberian mortadella.
- The flesh (peeled and deseeded) of 2 ripe tomatoes.
- 200 g pouring cream.
- 200 g heavy cream (for whipping).
- Brioche bread or any bread you like.
- Pink salt flakes.
YOU’LL NEED:
- Blender
- Piping bag
PREPARATION:

Grate the Manchego cheese.

Blend until you reach the desired texture: the cheese, mortadella, pouring cream, and tomato flesh.

Whip the remaining cream and gently fold it into the mixture.

Toast the brioche bread and, using a piping bag, pipe a little foam onto each small toast.

Lightly sprinkle with pink salt flakes.
