Las Terceras D.O.P. Manchego Cheese Foam and Iberian Mortadella on Oven-Warmed Brioche

INGREDIENTS:

  • 200 g Las Terceras semi-cured cheese.
  • 200 g Iberian mortadella.
  • The flesh (peeled and deseeded) of 2 ripe tomatoes.
  • 200 g pouring cream.
  • 200 g heavy cream (for whipping).
  • Brioche bread or any bread you like.
  • Pink salt flakes.

YOU’LL NEED:

  • Blender
  • Piping bag

PREPARATION:

Grate the Manchego cheese.

Blend until you reach the desired texture: the cheese, mortadella, pouring cream, and tomato flesh.

Whip the remaining cream and gently fold it into the mixture.

Toast the brioche bread and, using a piping bag, pipe a little foam onto each small toast.

Lightly sprinkle with pink salt flakes.
