Sustainability and environment
At Las Terceras, sustainability is part of our everyday work, bringing together agriculture, livestock farming and artisan cheesemaking within a single cycle. Our sheep are fed on pastures and cereals from our own farm, while resources such as straw, manure and whey are naturally reused.
We also embrace renewable energy and animal welfare as pillars of our commitment to the environment. We take care of every detail, from the flock’s diet to the responsible use of resources, because the quality of our cheeses begins with respect for the land and the animals.
Use of resources
At Las Terceras, agriculture, livestock farming and cheese-making form a natural and sustainable cycle. The Manchega sheep feed on the estate’s pasture and on cereals grown on its land, whose straw is also used for their bedding. In turn, manure is transformed into compost to fertilise the fields, and the whey left over from cheese production is reused as a feed supplement for the livestock.
Estate-made Manchego cheese
At Las Terceras, the entire process takes place on the estate itself, from caring for, feeding and milking the Manchega sheep to growing their feed and artisanally making the cheese. This is how its estate-made Manchego cheeses are born: produced with respect for every stage, for animal welfare and for the natural environment that surrounds them.
Natural fertiliser
At Las Terceras, manure from their own livestock is used to produce natural organic fertilisers that nourish the land. Through the combination of microorganisms, bacteria, yeasts and livestock waste, they enrich the soil sustainably, improving the quality and productivity of crops and reducing the use of unnecessary external resources.
Renewable energy
Las Terceras is committed to energy self-consumption through solar panels, a measure that supports sustainability and the efficient use of resources. The energy generated by its photovoltaic panels is used mainly for the estate’s facilities, such as granaries, sheepfolds, the cheese dairy and the milking parlour, thereby contributing to environmental protection.
Animal welfare
At Las Terceras, the welfare of its purebred Manchega sheep is essential to guarantee the quality of its cheeses. For this reason, its shepherds care for them throughout the year and, every morning, guide them to the estate’s pastures, where they graze freely in the tranquillity of Campo de Montiel.
