Estate

Las Terceras is an estate with more than 200 years of history, where tradition is the foundation on which we have built an artisan, family-run business. Our main activity is the production of Manchego Cheese with Protected Designation of Origin (PDO), made from milk obtained from the estate’s own livestock and farming activity.

Campo de Montiel is home to our land, where all the ingredients needed to make our Manchego cheese come from. In this way, we ensure that the diet of our purebred Manchega sheep is as natural and healthy as possible.

Our estate

The Las Terceras Estate, located in Valdepeñas, southeast of Ciudad Real and in the heart of Campo de Montiel, is mainly dedicated to the production of artisan Manchego Cheese PDO. Its cheese dairy, located in the old Las Terceras farmhouse, forms part of the estate itself, where the farming and livestock activity that sustains production also takes place.

Production

At Las Terceras, Manchego Cheese PDO is made artisanally from the milk of its own Manchega sheep, carefully overseeing every stage of the process: milking, curdling, moulding, pressing, salting and ageing. The result is natural and authentic cheese, with the flavour and quality characteristic of traditional Manchego Cheese PDO.

Purebred Manchega livestock

At Las Terceras, purebred Manchega sheep are raised in the privileged natural surroundings of Campo de Montiel, feeding through grazing and with resources from the estate’s own farming activity. Thanks to their genetics, care and diet, they produce high-quality milk for making artisan cheeses. Las Terceras is also a member of AGRAMA, an association dedicated to the conservation and improvement of the Manchega sheep breed.

Agriculture

The land of the Las Terceras Estate is mainly used to grow cereals and forage, intended solely and exclusively to feed our livestock. In this way, we ensure that the diet of our Manchega sheep is as natural and healthy as possible, allowing us to obtain an exclusive Manchego cheese. The municipality of Valdepeñas is also known for vine and olive cultivation, with the wine sector being one of the main drivers of its economic development.

Hunting

Las Terceras combines its cheese-making, farming and livestock tradition with a large natural area dedicated to small-game hunting, covering around 1,300 hectares in the heart of La Mancha. During the hunting season, from October to mid-February, the estate is home to species such as red-legged partridge, rabbit, hare and pigeon, offering a hunting experience in a natural setting that also allows visitors to discover the production of authentic Manchego cheese.
