
Pineapple-Shaped Manchego Cheese Las Terceras D.O.P. Appetizer
INGREDIENTS
- Las Terceras Manchego cream cheese (you can find the recipe on their website).
- A pinch of rosemary and ground black pepper.
- Crispy onions (optional).
- Whole toasted almonds.
- Split or sliced toasted almonds.
- For plating: Bay leaves and finely grated Las Terceras cured Manchego cheese.
PREPARACIÓN
Prepare the mixture: Mix the cream cheese, pepper, rosemary, and crispy onions together until you have a consistent dough.
Shape the cheese: Divide the dough into two portions and shape each one into a pyramid or oval (resembling a pine cone).
Add the "scales":
In one mound, press the whole almonds into the cheese.
In the other, use the split or sliced almonds.
Tip: Do not do this days in advance, as the almonds will lose their crunch and soften over time.
Plating: Decorate with bay leaves at the top (to look like the stem) and sprinkle the finely grated cheese over the top to create a "snowy" effect.
